Palauan Seafood Paella

Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb mussels, cleaned and debearded
- 1 lb squid, cleaned and sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup frozen peas
- 2 cups Arborio rice
- 4 cups seafood or chicken broth
- 1 teaspoon saffron threads
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Lemon wedges for serving
Instructions
- In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened.
- Add the Arborio rice to the pan and stir to coat with the oil and vegetables.
- Stir in the saffron threads and smoked paprika. Season with salt and pepper.
- Pour in the seafood or chicken broth and bring to a simmer. Cook for 10 minutes, stirring occasionally.
- Add the shrimp, mussels, squid, and frozen peas to the pan. Cover and cook for an additional 10-15 minutes, or until the seafood is cooked through and the rice is tender.
- Remove from heat and let the paella rest for 5 minutes before serving. Serve with lemon wedges.
