Palauan Seafood Paella

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels, cleaned and debearded
  • 1 lb squid, cleaned and sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 2 cups Arborio rice
  • 4 cups seafood or chicken broth
  • 1 teaspoon saffron threads
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Lemon wedges for serving

Instructions

  1. In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened.
  2. Add the Arborio rice to the pan and stir to coat with the oil and vegetables.
  3. Stir in the saffron threads and smoked paprika. Season with salt and pepper.
  4. Pour in the seafood or chicken broth and bring to a simmer. Cook for 10 minutes, stirring occasionally.
  5. Add the shrimp, mussels, squid, and frozen peas to the pan. Cover and cook for an additional 10-15 minutes, or until the seafood is cooked through and the rice is tender.
  6. Remove from heat and let the paella rest for 5 minutes before serving. Serve with lemon wedges.
