Ingredients

  • 2 cups chopped spinach
  • 1 cup chopped okra
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 1 cup peanut butter
  • 1 lb chicken, cut into pieces
  • 1 cup fish fillet, cut into chunks
  • 1/2 cup palm oil
  • 3 cups chicken broth
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the chopped onions and cook until translucent.
  3. Add the chicken pieces and fish chunks, and cook until browned.
  4. Stir in the peanut butter, chicken broth, chopped tomatoes, and spices.
  5. Simmer for 30 minutes, stirring occasionally.
  6. Add the chopped spinach and okra, and cook for an additional 15 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot with rice or fufu.
