Ingredients
- 2 cups chopped spinach
- 1 cup chopped okra
- 1 large onion, chopped
- 2 tomatoes, chopped
- 1 cup peanut butter
- 1 lb chicken, cut into pieces
- 1 cup fish fillet, cut into chunks
- 1/2 cup palm oil
- 3 cups chicken broth
- 1 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the chopped onions and cook until translucent.
- Add the chicken pieces and fish chunks, and cook until browned.
- Stir in the peanut butter, chicken broth, chopped tomatoes, and spices.
- Simmer for 30 minutes, stirring occasionally.
- Add the chopped spinach and okra, and cook for an additional 15 minutes.
- Season with salt and pepper to taste.
- Serve hot with rice or fufu.
