Ingredients
- 3 ripe bananas, mashed
- 3 eggs
- 1/4 cup almond butter
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup coconut flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the mashed bananas, eggs, almond butter, melted coconut oil, and vanilla extract.
- Add the coconut flour, baking powder, cinnamon, and salt to the wet ingredients and stir until well combined.
- Gently fold in the fresh blueberries.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
