Paleo Banana Blueberry Muffins

Ingredients

  • 3 ripe bananas, mashed
  • 3 eggs
  • 1/4 cup almond butter
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the mashed bananas, eggs, almond butter, melted coconut oil, and vanilla extract.
  3. Add the coconut flour, baking powder, cinnamon, and salt to the wet ingredients and stir until well combined.
  4. Gently fold in the fresh blueberries.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
