Paleo Beef Stew

Ingredients
- 2 lbs beef stew meat, cubed
- 2 tbsp coconut oil
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 4 cups beef broth
- 2 bay leaves
- 2 tbsp arrowroot powder (optional, for thickening)
Instructions
- In a large pot, heat the coconut oil over medium-high heat.
- Add the beef stew meat and brown on all sides, about 5 minutes.
- Add the diced onion, carrots, celery, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
- Season the mixture with salt, pepper, thyme, and rosemary. Stir to combine.
- Pour in the beef broth and add the bay leaves. Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.
- If desired, mix the arrowroot powder with a little water to create a slurry, then stir it into the stew to thicken the broth.
- Remove the bay leaves and serve the Paleo Beef Stew hot.
