Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 tbsp coconut oil
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cups beef broth
  • 2 bay leaves
  • 2 tbsp arrowroot powder (optional, for thickening)

Instructions

  1. In a large pot, heat the coconut oil over medium-high heat.
  2. Add the beef stew meat and brown on all sides, about 5 minutes.
  3. Add the diced onion, carrots, celery, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
  4. Season the mixture with salt, pepper, thyme, and rosemary. Stir to combine.
  5. Pour in the beef broth and add the bay leaves. Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.
  6. If desired, mix the arrowroot powder with a little water to create a slurry, then stir it into the stew to thicken the broth.
  7. Remove the bay leaves and serve the Paleo Beef Stew hot.
