Paleo Cauliflower Fried Rice
This Paleo Cauliflower Fried Rice is a delicious and healthy alternative to traditional fried rice. Packed with flavor and nutrients, this dish is perfect for a quick and easy weeknight meal.
Ingredients
- 1 head of cauliflower, grated
- 2 tablespoons coconut oil
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup peas
- 2 eggs, beaten
- 3 tablespoons coconut aminos
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of coconut oil in a large skillet over medium heat.
- Add the diced onion and carrots, and sauté until they start to soften, about 5 minutes.
- Stir in the minced garlic and grated cauliflower, and cook for another 5 minutes.
- Push the cauliflower mixture to one side of the skillet and add the remaining tablespoon of coconut oil to the empty side.
- Pour the beaten eggs into the empty side of the skillet and scramble until cooked through.
- Stir the eggs into the cauliflower mixture, then add the peas, coconut aminos, and sesame oil. Cook for an additional 2-3 minutes, stirring frequently.
- Season with salt and pepper to taste, and serve hot.
