Paleo Cauliflower Fried Rice

Paleo Cauliflower Fried Rice

Ingredients

  • 1 head of cauliflower, grated
  • 2 tablespoons coconut oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup peas
  • 2 eggs, beaten
  • 3 tablespoons coconut aminos
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of coconut oil in a large skillet over medium heat.
  2. Add the diced onion and carrots, and sauté until they start to soften, about 5 minutes.
  3. Stir in the minced garlic and grated cauliflower, and cook for another 5 minutes.
  4. Push the cauliflower mixture to one side of the skillet and add the remaining tablespoon of coconut oil to the empty side.
  5. Pour the beaten eggs into the empty side of the skillet and scramble until cooked through.
  6. Stir the eggs into the cauliflower mixture, then add the peas, coconut aminos, and sesame oil. Cook for an additional 2-3 minutes, stirring frequently.
  7. Season with salt and pepper to taste, and serve hot.
