Paleo Chicken And Asparagus Stir Fry

Ingredients

  • 1 lb boneless, skinless chicken breast, sliced
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 cloves garlic, minced
  • 1 tablespoon coconut aminos
  • 1 tablespoon sesame oil
  • 1 teaspoon arrowroot powder
  • 1 tablespoon coconut oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the coconut aminos, sesame oil, and arrowroot powder. Set aside.
  2. Season the sliced chicken with salt and pepper.
  3. Heat the coconut oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the asparagus and garlic. Cook for 3-4 minutes, or until the asparagus is tender-crisp.
  6. Return the chicken to the skillet and pour the sauce over the chicken and asparagus. Cook for an additional 2-3 minutes, stirring to coat everything in the sauce.
  7. Remove from heat and serve hot.
