Paleo Chicken Fajita Bowl

Ingredients
- 1 lb chicken breast, sliced
- 2 bell peppers, sliced
- 1 onion, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 cups cauliflower rice
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the sliced chicken to the skillet and season with chili powder, cumin, garlic powder, salt, and pepper. Cook until the chicken is no longer pink, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and sauté the bell peppers and onion until they are tender-crisp, about 5 minutes.
- While the vegetables are cooking, heat the cauliflower rice in a separate skillet over medium heat until heated through.
- To assemble the bowls, divide the cauliflower rice among 4 bowls, then top with the cooked chicken, sautéed vegetables, sliced avocado, and fresh cilantro.
