Paleo Chicken Fajita Bowl

Ingredients

  • 1 lb chicken breast, sliced
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 cups cauliflower rice
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  2. Add the sliced chicken to the skillet and season with chili powder, cumin, garlic powder, salt, and pepper. Cook until the chicken is no longer pink, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and sauté the bell peppers and onion until they are tender-crisp, about 5 minutes.
  4. While the vegetables are cooking, heat the cauliflower rice in a separate skillet over medium heat until heated through.
  5. To assemble the bowls, divide the cauliflower rice among 4 bowls, then top with the cooked chicken, sautéed vegetables, sliced avocado, and fresh cilantro.
