Paleo Lemon Herb Roasted Turkey

Ingredients

  • 1 whole turkey, about 12 pounds
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 2 lemons, zested and juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Rinse the turkey and pat dry with paper towels.
  3. In a small bowl, mix together the olive oil, garlic, herbs, lemon zest, lemon juice, salt, and pepper.
  4. Gently loosen the skin from the turkey breast and rub half of the herb mixture under the skin.
  5. Rub the remaining herb mixture over the outside of the turkey.
  6. Place the turkey on a rack in a roasting pan and roast in the preheated oven for about 3 hours, or until the internal temperature reaches 165°F (75°C).
  7. Let the turkey rest for 20 minutes before carving and serving.
