Paleo Mushroom And Thyme Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 lb mushrooms, sliced
  • 4 cups chicken or vegetable broth
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Add the sliced mushrooms and cook until they release their liquid and start to brown.
  4. Pour in the broth and add the fresh thyme leaves. Bring the soup to a simmer and let it cook for 15-20 minutes.
  5. Season with salt and pepper to taste.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  7. Return the soup to the pot and reheat if necessary.
  8. Serve hot, garnished with a sprig of fresh thyme if desired.
