Paleo Mushroom And Thyme Soup

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 lb mushrooms, sliced
- 4 cups chicken or vegetable broth
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Add the sliced mushrooms and cook until they release their liquid and start to brown.
- Pour in the broth and add the fresh thyme leaves. Bring the soup to a simmer and let it cook for 15-20 minutes.
- Season with salt and pepper to taste.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Return the soup to the pot and reheat if necessary.
- Serve hot, garnished with a sprig of fresh thyme if desired.
