Paleo Stuffed Acorn Squash

Ingredients
- 2 acorn squash, halved and seeds removed
- 1 lb ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 apple, diced
- 1/2 cup chopped pecans
- 2 tbsp olive oil
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the acorn squash halves on a baking sheet, cut side down, and roast for 30-35 minutes, or until tender.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the ground turkey to the skillet and cook until browned.
- Stir in the diced apple, pecans, cinnamon, nutmeg, salt, and pepper. Cook for an additional 5 minutes.
- Once the acorn squash is tender, remove it from the oven and carefully flip the halves over.
- Spoon the turkey mixture into the acorn squash halves.
- Return the stuffed squash to the oven and bake for an additional 10 minutes.
