Paleo Stuffed Acorn Squash

Ingredients

  • 2 acorn squash, halved and seeds removed
  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 apple, diced
  • 1/2 cup chopped pecans
  • 2 tbsp olive oil
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the acorn squash halves on a baking sheet, cut side down, and roast for 30-35 minutes, or until tender.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the ground turkey to the skillet and cook until browned.
  5. Stir in the diced apple, pecans, cinnamon, nutmeg, salt, and pepper. Cook for an additional 5 minutes.
  6. Once the acorn squash is tender, remove it from the oven and carefully flip the halves over.
  7. Spoon the turkey mixture into the acorn squash halves.
  8. Return the stuffed squash to the oven and bake for an additional 10 minutes.
  9. Serve hot and enjoy!
