Paleo Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cauliflower rice
  • 1 cup diced tomatoes
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a skillet, cook the ground turkey, onion, and garlic until the turkey is no longer pink.
  3. Add the cauliflower rice, diced tomatoes, paprika, oregano, salt, and pepper to the skillet and cook for 5 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. Stuff the bell peppers with the turkey mixture and place them in a baking dish.
  6. Bake for 25-30 minutes, until the peppers are tender.
