Paleo Stuffed Bell Peppers

Ingredients
- 4 large bell peppers
- 1 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cauliflower rice
- 1 cup diced tomatoes
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, cook the ground turkey, onion, and garlic until the turkey is no longer pink.
- Add the cauliflower rice, diced tomatoes, paprika, oregano, salt, and pepper to the skillet and cook for 5 minutes.
- Preheat the oven to 375°F (190°C).
- Stuff the bell peppers with the turkey mixture and place them in a baking dish.
- Bake for 25-30 minutes, until the peppers are tender.
