Ingredients

  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 large sweet potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  3. Add the diced sweet potatoes, chicken or vegetable broth, and dried thyme to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the sweet potatoes are tender.
  4. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  5. Season the soup with salt and pepper to taste. Serve the soup hot, topped with the crispy bacon.
