Ingredients
- 4 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 large sweet potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 teaspoon dried thyme

Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
- Add the diced sweet potatoes, chicken or vegetable broth, and dried thyme to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the sweet potatoes are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Season the soup with salt and pepper to taste. Serve the soup hot, topped with the crispy bacon.
