Paleo Tomato Basil Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, or until fully cooked.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the minced garlic and cook for 1-2 minutes.
  6. Add the diced tomatoes (with their juices) to the skillet and bring to a simmer.
  7. Return the chicken to the skillet and spoon the tomato mixture over the chicken.
  8. Sprinkle the chopped basil over the chicken and tomato mixture.
  9. Cover the skillet and let it simmer for 5 minutes.
  10. Remove from heat and serve the chicken with the tomato basil sauce.
