Ingredients
- 1 ½ cups dried chickpeas, soaked overnight
- 1 small onion, roughly chopped
- 4 cloves garlic
- 1 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 tsp baking powder
- 4-6 tbsp all-purpose flour
- Vegetable oil, for frying
- 12 small slider buns
- Lettuce, tomato, and tahini sauce for serving
Instructions
- Drain the soaked chickpeas and pat them dry with paper towels.
- In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, salt, black pepper, and cayenne pepper. Pulse until the mixture is finely chopped but not pureed.
- Sprinkle the baking powder and 4 tablespoons of flour over the mixture, and pulse to combine. The mixture should hold together when squeezed into a ball. If it's too wet, add more flour, 1 tablespoon at a time.
- Form the mixture into small patties, about 1 ½ inches in diameter.
- Heat vegetable oil in a large skillet over medium heat. Fry the falafel patties in batches for 2-3 minutes per side, until they are golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
- Assemble the sliders by placing a falafel patty on each bun, topping with lettuce, tomato, and a drizzle of tahini sauce. Serve immediately.
