Palestinian Falafel Waffles (وافل الفلافل الفلسطينية)

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 small onion, chopped
  • 4 cloves garlic
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp baking soda
  • Salt to taste
  • Vegetable oil for greasing

Instructions

  1. Drain the soaked chickpeas and pat them dry with a paper towel.
  2. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, and salt. Pulse until the mixture is finely ground.
  3. Preheat the waffle iron and lightly grease it with vegetable oil.
  4. Spoon the falafel mixture onto the waffle iron and spread it evenly. Close the waffle iron and cook for about 5-7 minutes, or until the waffles are golden and crispy.
  5. Repeat with the remaining falafel mixture.
  6. Serve the Palestinian Falafel Waffles hot with tahini sauce, hummus, or your favorite toppings.
