Palestinian Pistachio Baklava (بقلاوة فستق فلسطينية)

Ingredients
- 1 package of phyllo pastry sheets
- 3 cups of shelled pistachios, finely chopped
- 1 cup of unsalted butter, melted
- 1 cup of granulated sugar
- 1 cup of water
- 1/2 cup of honey
- 1 teaspoon of rose water
- 1 teaspoon of ground cardamom
Instructions
- Preheat the oven to 350°F (175°C).
- Brush a 9x13 inch baking dish with melted butter.
- Place a sheet of phyllo pastry in the dish and brush it with melted butter. Repeat with 7 more sheets, brushing each with butter.
- Sprinkle a thin layer of chopped pistachios over the phyllo pastry.
- Place a sheet of phyllo pastry on top of the pistachio layer and brush with butter. Repeat with 4 more sheets, brushing each with butter.
- Add another layer of pistachios.
- Continue layering phyllo and pistachios, brushing each phyllo sheet with butter, until all the pistachios are used.
- Cut the baklava into diamond or square shapes using a sharp knife.
- Bake in the preheated oven for 45-50 minutes, or until golden brown.
- While the baklava is baking, make the syrup by combining the sugar, water, honey, rose water, and cardamom in a saucepan. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- When the baklava is done, remove it from the oven and immediately pour the hot syrup over the hot baklava.
- Allow the baklava to cool completely before serving.
