Palm Nut Soup (liberian Style Palm Nut Soup)
Palm Nut Soup, also known as Palm Butter, is a traditional and popular dish in Liberian cuisine. This rich and flavorful soup is made from palm nuts and is often served with rice or fufu.
Ingredients
- 2 cups palm nuts
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 scotch bonnet pepper, whole
- 1 pound chicken, cut into pieces
- 1 cup smoked fish, flaked
- 1 cup shrimp, peeled and deveined
- 1 cup okra, sliced
- 2 cups water
- Salt to taste
Instructions
- In a large pot, boil the palm nuts in water for 30 minutes. Allow to cool, then blend and strain to extract the palm nut cream.
- Return the palm nut cream to the pot and add the chopped onion, tomatoes, and scotch bonnet pepper. Simmer for 15 minutes.
- Add the chicken pieces and simmer for 20 minutes, then add the smoked fish and shrimp. Cook for an additional 10 minutes.
- Stir in the sliced okra and cook for 5 minutes. Season with salt to taste.
- Serve the Palm Nut Soup hot with rice or fufu.
