Palm Wine Chicken Stew

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup palm wine
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 2 cups chicken broth
  • 1 scotch bonnet pepper, whole
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are translucent.
  2. Add the chicken pieces to the pot and brown on all sides.
  3. Stir in the tomato paste, diced tomatoes, and palm wine. Allow the mixture to simmer for 5 minutes.
  4. Pour in the chicken broth, add the scotch bonnet pepper, and season with salt and pepper. Cover the pot and let the stew simmer for 45 minutes, or until the chicken is cooked through and tender.
  5. Remove the scotch bonnet pepper before serving. Serve the Palm Wine Chicken Stew hot with rice or bread.
