Palma De Mallorca Paella

Ingredients

  • 1 cup bomba rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 tomato, diced
  • 1/2 cup peas
  • 8 prawns, peeled and deveined
  • 8 mussels, cleaned
  • 1/2 teaspoon saffron threads
  • 4 cups seafood or chicken broth
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a paella pan, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until translucent.
  3. Stir in the sliced bell pepper and diced tomato, and cook for 5 minutes.
  4. Add the bomba rice and saffron threads, and stir to coat the rice with the oil and spices.
  5. Pour in the seafood or chicken broth, and season with salt and pepper. Bring to a simmer.
  6. Arrange the prawns, mussels, and peas on top of the rice mixture.
  7. Cover the pan and cook for 20-25 minutes, or until the rice is tender and the seafood is cooked through.
  8. Remove from heat and let it rest for 5 minutes before serving.
