Palma De Mallorca Paella

Ingredients
- 1 cup bomba rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 tomato, diced
- 1/2 cup peas
- 8 prawns, peeled and deveined
- 8 mussels, cleaned
- 1/2 teaspoon saffron threads
- 4 cups seafood or chicken broth
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a paella pan, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until translucent.
- Stir in the sliced bell pepper and diced tomato, and cook for 5 minutes.
- Add the bomba rice and saffron threads, and stir to coat the rice with the oil and spices.
- Pour in the seafood or chicken broth, and season with salt and pepper. Bring to a simmer.
- Arrange the prawns, mussels, and peas on top of the rice mixture.
- Cover the pan and cook for 20-25 minutes, or until the rice is tender and the seafood is cooked through.
- Remove from heat and let it rest for 5 minutes before serving.
