Ingredients
- 2 cups fresh spinach, washed and chopped
- 2 large potatoes, peeled and thinly sliced
- 1 onion, finely chopped
- 2 green chilies, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 3 tablespoons oil for frying
- Water as needed
Instructions
- Heat oil in a pan and fry the potato slices until golden brown. Remove and set aside.
- In the same pan, add the chopped onion and green chilies. Sauté until the onion turns translucent.
- Add the turmeric, cumin, coriander, and red chili powder. Stir well.
- Add the chopped spinach and cook until wilted.
- Add the fried potatoes to the spinach mixture and stir to combine.
- Add water as needed to create a thick curry consistency. Simmer for a few minutes.
- Season with salt to taste.
- Remove from heat and serve hot with rice or flatbread.
