Ingredients

  • 2 cups fresh spinach, washed and chopped
  • 2 large potatoes, peeled and thinly sliced
  • 1 onion, finely chopped
  • 2 green chilies, sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 3 tablespoons oil for frying
  • Water as needed

Instructions

  1. Heat oil in a pan and fry the potato slices until golden brown. Remove and set aside.
  2. In the same pan, add the chopped onion and green chilies. Sauté until the onion turns translucent.
  3. Add the turmeric, cumin, coriander, and red chili powder. Stir well.
  4. Add the chopped spinach and cook until wilted.
  5. Add the fried potatoes to the spinach mixture and stir to combine.
  6. Add water as needed to create a thick curry consistency. Simmer for a few minutes.
  7. Season with salt to taste.
  8. Remove from heat and serve hot with rice or flatbread.
