Palong Shaak Bhaja (Stir-Fried Spinach)

Ingredients

  • 500g fresh spinach leaves, washed and chopped
  • 2 tbsp mustard oil
  • 2-3 green chilies, sliced
  • 1 tsp panch phoron (Bengali five-spice blend)
  • 1/2 tsp turmeric powder
  • Salt to taste

Instructions

  1. Heat mustard oil in a pan over medium heat.
  2. Add panch phoron and green chilies. Sauté for a minute until fragrant.
  3. Add the chopped spinach, turmeric powder, and salt. Stir-fry for 3-4 minutes until the spinach is wilted and cooked.
  4. Remove from heat and serve hot as a side dish.
