Ingredients

  • 1 lb spinach, washed and chopped
  • 1 cup mushrooms, sliced
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup heavy cream
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • 1 tsp ginger-garlic paste
  • 1 green chili, chopped
  • 1/2 cup water

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and green chili, and sauté for a minute.
  3. Stir in the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
  4. Add the chopped spinach and mushrooms, and cook for 5 minutes.
  5. Pour in the water and simmer for another 5 minutes.
  6. Stir in the heavy cream and garam masala, and cook for 2-3 minutes.
  7. Palong Shaak Matar is ready to be served hot with rice or naan.
