Palong Shaak Matar (Creamy Spinach and Mushroom Curry) is a popular Bangladeshi dish that combines the earthy flavors of mushrooms with the vibrant green goodness of spinach, all simmered in a rich and creamy curry sauce.
Ingredients
- 1 lb spinach, washed and chopped
- 1 cup mushrooms, sliced
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1/2 cup heavy cream
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- 1 tsp ginger-garlic paste
- 1 green chili, chopped
- 1/2 cup water
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chili, and sauté for a minute.
- Stir in the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
- Add the chopped spinach and mushrooms, and cook for 5 minutes.
- Pour in the water and simmer for another 5 minutes.
- Stir in the heavy cream and garam masala, and cook for 2-3 minutes.
- Palong Shaak Matar is ready to be served hot with rice or naan.
