Ingredients

  • 2 lbs taro leaves, washed and stems removed
  • 2 cans (28 oz) coconut cream
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup grated coconut
  • 1/2 cup water
  • 1/4 cup butter
  • 1 package lasagna noodles
  • 2 cups grated mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, combine the taro leaves, coconut cream, onion, garlic, salt, and black pepper. Cook over medium heat for 20 minutes, stirring occasionally.
  3. In a separate pan, toast the grated coconut over medium heat until golden brown.
  4. Layer the bottom of a 9x13 inch baking dish with lasagna noodles. Spread half of the taro and coconut mixture over the noodles. Sprinkle with half of the toasted coconut. Repeat the layers, ending with a layer of noodles on top.
  5. Sprinkle the grated mozzarella cheese over the top layer of noodles. Dot with butter.
  6. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.
  7. Let the palusami lasagna cool for 10 minutes before slicing and serving.
