Palusami (taro Leaves In Coconut Cream) Lasagna
Palusami Lasagna is a delicious twist on the traditional Niuean dish, combining the flavors of taro leaves and coconut cream in a comforting and satisfying lasagna.
Ingredients
- 2 lbs taro leaves, washed and stems removed
- 2 cans (28 oz) coconut cream
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup grated coconut
- 1/2 cup water
- 1/4 cup butter
- 1 package lasagna noodles
- 2 cups grated mozzarella cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, combine the taro leaves, coconut cream, onion, garlic, salt, and black pepper. Cook over medium heat for 20 minutes, stirring occasionally.
- In a separate pan, toast the grated coconut over medium heat until golden brown.
- Layer the bottom of a 9x13 inch baking dish with lasagna noodles. Spread half of the taro and coconut mixture over the noodles. Sprinkle with half of the toasted coconut. Repeat the layers, ending with a layer of noodles on top.
- Sprinkle the grated mozzarella cheese over the top layer of noodles. Dot with butter.
- Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.
- Let the palusami lasagna cool for 10 minutes before slicing and serving.
