Ingredients
- 2 cups diced pumpkin
- 1 can chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon grated ginger
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) coconut milk
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, grated ginger, ground turmeric, ground cumin, ground coriander, and cayenne pepper. Cook for 2 minutes, stirring constantly.
- Add the diced pumpkin and drained chickpeas to the pot. Stir to combine with the spices and onion mixture.
- Pour in the coconut milk and season with salt. Bring the curry to a gentle simmer and cook for 20-25 minutes, or until the pumpkin is tender.
