Ingredients
- 2 cups diced pumpkin
- 1 can (400ml) coconut milk

- 1 red chili, sliced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- Salt to taste
- 2 tbsp cooking oil
- Fresh coriander leaves for garnish
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, grated ginger, and sliced red chili. Sauté until the onions are soft and translucent.
- Add the diced pumpkin to the pot and stir to combine with the aromatics.
- Pour in the coconut milk and stir well. Bring the mixture to a gentle simmer.
- Add the turmeric, cumin, coriander, paprika, and salt. Stir to combine all the spices with the pumpkin and coconut milk.
- Cover the pot and let the curry simmer for 30-35 minutes, or until the pumpkin is tender.
- Once the pumpkin is cooked through, taste the curry and adjust the seasoning if needed.
- Garnish with fresh coriander leaves before serving.
