  • 1 red chili, sliced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • Salt to taste
  • 2 tbsp cooking oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, grated ginger, and sliced red chili. Sauté until the onions are soft and translucent.
  3. Add the diced pumpkin to the pot and stir to combine with the aromatics.
  4. Pour in the coconut milk and stir well. Bring the mixture to a gentle simmer.
  5. Add the turmeric, cumin, coriander, paprika, and salt. Stir to combine all the spices with the pumpkin and coconut milk.
  6. Cover the pot and let the curry simmer for 30-35 minutes, or until the pumpkin is tender.
