Ingredients

- 2 cups vegetable broth

- 1 tsp ginger, grated
- Salt and pepper to taste
- 2 large taro roots, thinly sliced
- Vegetable oil for frying
Instructions
- In a large pot, combine the diced pumpkin, coconut milk, vegetable broth, onion, garlic, and ginger. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the pumpkin is tender.
- Using an immersion blender, blend the soup until smooth. Season with salt and pepper to taste.
- While the soup is simmering, heat vegetable oil in a deep pan. Fry the thinly sliced taro roots until crispy and golden brown. Drain on paper towels and sprinkle with salt.
