Ingredients
- 4 haddock fillets
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- 4 tablespoons butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Season the haddock fillets with salt and pepper, then dredge them in flour, shaking off any excess.
- In a large skillet, heat 2 tablespoons of butter and olive oil over medium-high heat.
- Add the haddock fillets to the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and cook for 1 minute.
- Stir in the lemon juice and chopped parsley, then return the haddock fillets to the skillet, spooning the sauce over the fish. Cook for an additional 1-2 minutes.
- Remove from heat and serve the haddock with the lemon butter sauce drizzled on top.
