Panadas Sardas (sardinian Panadas)
Panadas Sardas, also known as Sardinian Panadas, are traditional savory pastries from the Italian island of Sardinia. These delicious pastries are filled with a flavorful mixture of ingredients and are perfect for a special meal or a picnic.
Ingredients
- 500g all-purpose flour
- 200g lard
- 300g potatoes, diced
- 200g Sardinian pecorino cheese, grated
- 200g canned sardines, drained and chopped
- 1 onion, finely chopped
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour with a pinch of salt and the lard until crumbly.
- Add cold water, a little at a time, and knead until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a pan, sauté the onion in olive oil until translucent. Add the diced potatoes and cook until tender. Season with salt and pepper.
- Remove from heat and let it cool. Then, add the grated pecorino cheese and chopped sardines to the potato mixture.
- Preheat the oven to 180°C (350°F).
- Divide the dough into 6 equal parts. Roll out each piece into a circle and place a portion of the filling in the center.
- Close the pastry to form a half-moon shape, crimping the edges with a fork to seal.
- Place the panadas on a baking sheet and bake for 30-35 minutes, or until golden brown.
- Remove from the oven and let them cool for a few minutes before serving.
