Panadas Sardas (sardinian Panadas)

Ingredients

  • 500g all-purpose flour
  • 200g lard
  • 300g potatoes, diced
  • 200g Sardinian pecorino cheese, grated
  • 200g canned sardines, drained and chopped
  • 1 onion, finely chopped
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flour with a pinch of salt and the lard until crumbly.
  2. Add cold water, a little at a time, and knead until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. In a pan, sauté the onion in olive oil until translucent. Add the diced potatoes and cook until tender. Season with salt and pepper.
  4. Remove from heat and let it cool. Then, add the grated pecorino cheese and chopped sardines to the potato mixture.
  5. Preheat the oven to 180°C (350°F).
  6. Divide the dough into 6 equal parts. Roll out each piece into a circle and place a portion of the filling in the center.
  7. Close the pastry to form a half-moon shape, crimping the edges with a fork to seal.
  8. Place the panadas on a baking sheet and bake for 30-35 minutes, or until golden brown.
  9. Remove from the oven and let them cool for a few minutes before serving.
