Panama City Shrimp Ceviche (Ceviche de Camarones de Ciudad de Panamá)

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 cup lime juice
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1/2 cup cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shrimp and lime juice. Make sure the shrimp is completely submerged in the lime juice. Cover and refrigerate for 15-20 minutes, or until the shrimp turns opaque and "cooked" in the lime juice.

  3. Season the ceviche with salt and pepper to taste.
  4. Chill the ceviche in the refrigerator for at least 30 minutes before serving.
