Panamanian Coconut Flan (Flan de Coco Panameño)

Ingredients
- 6 large eggs
- 1 can (14 oz) sweetened condensed milk
- 1 can (13.5 oz) coconut milk
- 1 cup sugar
- 1/2 cup shredded coconut
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, heat the sugar over medium heat, stirring constantly until it melts and turns into a golden caramel. Pour the caramel into a 9-inch round baking dish, tilting the dish to coat the bottom evenly.
- In a blender, combine the eggs, sweetened condensed milk, coconut milk, shredded coconut, and vanilla extract. Blend until smooth.
- Pour the mixture into the caramel-coated baking dish.
- Place the baking dish in a larger roasting pan and fill the roasting pan with hot water halfway up the sides of the baking dish.
- Bake in the preheated oven for 50-60 minutes, or until the flan is set and a toothpick inserted into the center comes out clean.
- Remove the flan from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight, before serving.
- To serve, run a knife around the edge of the flan and invert it onto a serving plate, allowing the caramel to drizzle over the top.
