Panamanian Corn Dumplings (bollos De Maíz)

Ingredients
- 4 cups fresh corn kernels
- 1 cup coconut milk
- 1/4 cup sugar
- 1/2 teaspoon salt
- Banana leaves for wrapping
Instructions
- In a blender, puree the fresh corn kernels with coconut milk until smooth.
- Transfer the mixture to a bowl and stir in the sugar and salt.
- Cut the banana leaves into 8-inch squares and place a spoonful of the corn mixture in the center of each square.
- Fold the banana leaves to form a packet and secure with kitchen twine.
- Place the packets in a large pot of boiling water and cook for 30 minutes.
- Remove the packets from the water and let them cool slightly before serving.
