Panamanian Corn Dumplings (bollos De Maíz)

Ingredients

  • 4 cups fresh corn kernels
  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • Banana leaves for wrapping

Instructions

  1. In a blender, puree the fresh corn kernels with coconut milk until smooth.
  2. Transfer the mixture to a bowl and stir in the sugar and salt.
  3. Cut the banana leaves into 8-inch squares and place a spoonful of the corn mixture in the center of each square.
  4. Fold the banana leaves to form a packet and secure with kitchen twine.
  5. Place the packets in a large pot of boiling water and cook for 30 minutes.
  6. Remove the packets from the water and let them cool slightly before serving.
