Panamanian Fish Dumplings (bollos De Pescado)
Panamanian Fish Dumplings, also known as Bollos de Pescado, are a popular dish in Panamanian cuisine. These savory dumplings are made with seasoned fish and corn dough, then wrapped in banana leaves and steamed to perfection.
Ingredients
- 1 lb white fish fillets, such as tilapia or cod
- 1 cup cornmeal
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1/4 cup cilantro, chopped
- 1/4 cup green olives, chopped
- 1/4 cup raisins
- 1/4 cup capers
- 1/4 cup vegetable oil
- 1/4 cup achiote (annatto) oil
- Salt and pepper to taste
- 6 banana leaves, cut into 12x12 inch squares
Instructions
- In a bowl, combine the fish, cornmeal, onion, tomatoes, bell pepper, garlic, cilantro, olives, raisins, capers, vegetable oil, achiote oil, salt, and pepper. Mix well to combine.
- Place a portion of the fish mixture in the center of each banana leaf square. Fold the banana leaf over the filling to form a packet and secure with kitchen twine.
- Place the banana leaf packets in a large steamer and steam for 45 minutes, or until the fish is cooked through and the dough is firm.
- Remove the banana leaf packets from the steamer and let cool for a few minutes before serving.
