Panamanian Seafood Paella (Paella de Mariscos Panameña)

Ingredients
- 2 cups of medium-grain rice
- 1 pound of shrimp, peeled and deveined
- 1 pound of squid, cleaned and sliced into rings
- 1 pound of mussels, cleaned and debearded
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 4 cloves of garlic, minced
- 1 tomato, diced
- 1 teaspoon of saffron threads
- 4 cups of seafood or chicken broth
- 1/4 cup of white wine
- 1/4 cup of fresh parsley, chopped
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Lemon wedges for serving
Instructions
- In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, and sauté until the vegetables are softened.
- Add the tomato and saffron threads to the pan, and cook for a few minutes until the tomato begins to break down.
- Stir in the rice, coating it with the vegetable mixture. Pour in the white wine and cook for 2 minutes.
- Pour in the broth and bring the mixture to a boil. Reduce the heat to low and let the rice simmer for 15 minutes, stirring occasionally.
- Add the shrimp, squid, and mussels to the pan, nestling them into the rice. Cover the pan and cook for an additional 10-15 minutes, or until the seafood is cooked through and the rice is tender.
- Sprinkle the paella with chopped parsley and serve with lemon wedges on the side.
