Ingredients
- 1 lb mixed seafood (shrimp, fish, squid, mussels)

- 1 cup coconut milk
- 2 cups fish or seafood broth
- 1 cup white rice
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, bell peppers, and garlic. Cook until the vegetables are soft.
- Add the chopped tomatoes, cumin, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Stir in the coconut milk and seafood broth. Bring the mixture to a simmer.
- Add the mixed seafood and rice to the pot. Cover and cook for 20-25 minutes, or until the rice is tender and the seafood is cooked through.
