Panamanian Shredded Beef Stew (ropa Vieja)

Ingredients

  • 2 lbs flank steak
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 3 tbsp vegetable oil

Instructions

  1. Season the flank steak with salt, pepper, cumin, and paprika.
  2. Heat 2 tbsp of vegetable oil in a large pot over medium-high heat. Sear the flank steak on both sides until browned. Remove and set aside.
  3. Heat the remaining 1 tbsp of vegetable oil in the same pot. Add the onion, bell pepper, and garlic. Cook until softened.
  4. Stir in the crushed tomatoes and beef broth. Return the flank steak to the pot.
  5. Simmer the stew over low heat for 2-3 hours, until the beef is tender and easily shredded with a fork.
  6. Once the beef is shredded, continue to cook for another 15-20 minutes to allow the flavors to meld.
  7. Adjust seasoning with salt and pepper if needed.
