Panamanian Shredded Beef Stew (ropa Vieja)
Ropa Vieja, which translates to "old clothes" in Spanish, is a traditional Panamanian shredded beef stew that is rich in flavor and history. This hearty dish is a staple in Panamanian cuisine and is perfect for a comforting meal with family and friends.
Ingredients
- 2 lbs flank steak
- 1 onion, sliced
- 1 green bell pepper, sliced
- 4 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 3 tbsp vegetable oil
Instructions
- Season the flank steak with salt, pepper, cumin, and paprika.
- Heat 2 tbsp of vegetable oil in a large pot over medium-high heat. Sear the flank steak on both sides until browned. Remove and set aside.
- Heat the remaining 1 tbsp of vegetable oil in the same pot. Add the onion, bell pepper, and garlic. Cook until softened.
- Stir in the crushed tomatoes and beef broth. Return the flank steak to the pot.
- Simmer the stew over low heat for 2-3 hours, until the beef is tender and easily shredded with a fork.
- Once the beef is shredded, continue to cook for another 15-20 minutes to allow the flavors to meld.
- Adjust seasoning with salt and pepper if needed.
