Panamanian Stuffed Potatoes (rellenos De Papa)

Ingredients

  • 4 large potatoes
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup bread crumbs
  • 2 eggs, beaten
  • Vegetable oil for frying

Instructions

  1. Boil the potatoes in salted water until tender. Let them cool, then peel and mash them.
  2. In a skillet, cook the ground beef, onion, bell pepper, and garlic until the meat is browned and the vegetables are soft. Add the cumin, paprika, salt, and pepper. Remove from heat and let it cool.
  3. Take a portion of the mashed potatoes and flatten it in your hand. Place a spoonful of the meat mixture in the center, then shape the potato around the filling to form a ball. Repeat with the remaining potatoes and filling.
  4. Dip each stuffed potato in the beaten eggs, then roll in the bread crumbs until coated.
  5. Heat the vegetable oil in a large skillet over medium heat. Fry the stuffed potatoes until golden brown on all sides.
  6. Remove from the oil and place on a paper towel to drain excess oil.
  7. Serve the Panamanian Stuffed Potatoes hot and enjoy!
