Panamanian Style Beef Stew (Estofado de Res Estilo Panameño)

Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 1 cup beef broth
  • 1 cup water
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt, pepper, cumin, and paprika.
  2. Heat the vegetable oil in a large pot over medium heat. Add the seasoned beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Add the tomatoes, carrots, potatoes, and bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.
  5. Return the beef to the pot and pour in the beef broth and water. Bring to a simmer, then cover and cook for 1.5 to 2 hours, or until the beef is tender.
