Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 cups long-grain white rice
- 1 onion, finely chopped

- 2 tablespoons tomato paste
- 4 cups chicken broth
- 1/4 cup chopped fresh cilantro

Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion, red bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the rice to the pot and stir to coat it with the vegetable mixture. Cook for 2 minutes, stirring occasionally.
- Stir in the cumin, oregano, and tomato paste. Cook for 1 minute to toast the spices.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes.
- While the rice is cooking, season the shrimp with salt and pepper. In a separate pan, heat a little oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side.
- Once the rice is cooked, fluff it with a fork and gently fold in the cooked shrimp and chopped cilantro.
- Adjust the seasoning with salt and pepper if needed. Serve the Camarones y Arroz Estilo Panameño hot, garnished with additional cilantro if desired.
