Panamanian Style Shrimp and Rice (Camarones y Arroz Estilo Panameño)

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 cups long-grain white rice
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, red bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.
  2. Add the rice to the pot and stir to coat it with the vegetable mixture. Cook for 2 minutes, stirring occasionally.
  3. Stir in the cumin, oregano, and tomato paste. Cook for 1 minute to toast the spices.
  4. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes.
  5. While the rice is cooking, season the shrimp with salt and pepper. In a separate pan, heat a little oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side.
  6. Once the rice is cooked, fluff it with a fork and gently fold in the cooked shrimp and chopped cilantro.
  7. Adjust the seasoning with salt and pepper if needed. Serve the Camarones y Arroz Estilo Panameño hot, garnished with additional cilantro if desired.
