Panamanian Style Stuffed Bell Peppers (Pimientos Rellenos Estilo Panameño)

Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/2 cup frozen peas
  • 1/4 cup raisins
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup tomato sauce
  • 1/2 cup chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, brown the ground beef over medium heat. Add the onion and garlic, and cook until the onion is translucent.
  4. Stir in the cooked rice, diced tomato, frozen peas, raisins, cumin, paprika, salt, pepper, and cilantro. Cook for 5 minutes, then remove from heat.
  5. Stuff the bell peppers with the beef and rice mixture, and place them in a baking dish.
  6. In a small bowl, mix the tomato sauce and broth. Pour the mixture over the stuffed peppers.
  7. Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes.
  8. Once the peppers are tender and the filling is heated through, remove from the oven and let them cool for a few minutes before serving.
