Ingredients
- 4 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- 1/2 cup frozen peas
- 1/4 cup raisins
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1/2 cup tomato sauce
- 1/2 cup chicken or vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, brown the ground beef over medium heat. Add the onion and garlic, and cook until the onion is translucent.
- Stir in the cooked rice, diced tomato, frozen peas, raisins, cumin, paprika, salt, pepper, and cilantro. Cook for 5 minutes, then remove from heat.
- Stuff the bell peppers with the beef and rice mixture, and place them in a baking dish.
- In a small bowl, mix the tomato sauce and broth. Pour the mixture over the stuffed peppers.
- Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes.
- Once the peppers are tender and the filling is heated through, remove from the oven and let them cool for a few minutes before serving.
