Panamanian Yuca Fritters (carimañolas)
Carimañolas are a popular snack in Panama, made with yuca (cassava) and filled with savory meat. They are crispy on the outside and soft on the inside, making them a delicious treat for any time of the day.
Ingredients
- 2 lbs yuca (cassava), peeled and grated
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- Salt and pepper to taste
- 2 cups vegetable oil for frying
Instructions
- In a large bowl, mix the grated yuca with a pinch of salt.
- In a separate bowl, combine the ground beef, onion, garlic, cumin, salt, and pepper.
- Take a small portion of the yuca mixture and flatten it in your hand. Place a spoonful of the meat mixture in the center and fold the yuca over the filling, shaping it into a cylinder. Repeat with the remaining yuca and meat mixture.
- Heat the vegetable oil in a deep pan over medium heat. Fry the carimañolas in batches until golden brown, about 5-7 minutes per batch.
- Remove the carimañolas from the oil and place them on a paper towel to drain excess oil.
- Serve hot and enjoy!
