Pancake Pastry (tuyak Samsa)

Ingredients

  • 2 cups all-purpose flour
  • 1 cup milk
  • 2 eggs
  • 1/4 teaspoon salt
  • 1 onion, finely chopped
  • 200g ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large bowl, whisk together the flour, milk, eggs, and salt to make the pancake batter. Set aside.
  2. In a separate bowl, mix together the chopped onion, ground beef, cumin, paprika, salt, and pepper to make the filling.
  3. Heat a non-stick skillet over medium heat and brush with a little vegetable oil.
  4. Pour a ladleful of pancake batter into the skillet and swirl to spread it evenly. Cook for 2-3 minutes until the bottom is golden brown, then flip and cook the other side for another 2-3 minutes. Repeat with the remaining batter to make 8 pancakes.
  5. Place a spoonful of the filling on one half of each pancake, then fold the other half over to form a half-moon shape. Press the edges to seal.
  6. Heat the remaining vegetable oil in a skillet and cook the filled pancakes for 3-4 minutes on each side until golden brown and crispy.
  7. Remove from the skillet and drain on paper towels before serving.
