Pancake Stew (tuyak Karta)

Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 lb stewing beef, cut into chunks
  • 3 cups beef broth
  • 2 tablespoons vegetable oil
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the flour, milk, egg, salt, and black pepper to make the pancake batter. Set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and cook until softened.
  3. Add the stewing beef to the pot and cook until browned on all sides.
  4. Stir in the tomato paste, paprika, and dried thyme, then add the beef broth. Bring to a simmer.
  5. Add the carrots and potatoes to the pot. Season with salt and pepper to taste. Cover and simmer for 30 minutes.
  6. While the stew is simmering, make the pancakes. Heat a non-stick skillet over medium heat and pour a ladle of batter into the skillet. Cook until bubbles form on the surface, then flip and cook the other side. Repeat with the remaining batter.
  7. Serve the stew in bowls with a pancake on top of each serving. Enjoy!
