Pancit Bihon Bonanza

Ingredients

  • 1 lb bihon (rice noodles)
  • 2 cups cooked chicken, shredded
  • 1 cup carrots, julienned
  • 1 cup cabbage, shredded
  • 1 cup green beans, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 3 tablespoons soy sauce
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

Instructions

  1. Soak the bihon in water for about 10 minutes or until soft. Drain and set aside.
  2. In a large pan, heat the cooking oil and sauté the garlic and onion until fragrant.
  3. Add the shredded chicken and cook for 2-3 minutes.
  4. Pour in the chicken broth and soy sauce. Bring to a boil.
  5. Add the carrots, green beans, and cabbage. Cook for 3-5 minutes or until the vegetables are tender-crisp.
