Pancit Bihon (Stir-Fried Rice Noodles)

Ingredients

  • 8 oz rice noodles
  • 2 tbsp cooking oil
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 cup sliced pork or chicken
  • 1 cup sliced shrimp
  • 1 cup sliced Chinese sausage (optional)
  • 2 cups shredded cabbage
  • 1 cup sliced carrots
  • 1 cup sliced green beans
  • 1/4 cup soy sauce
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1/2 cup green onions, chopped
  • Lemon or calamansi wedges for serving

Instructions

  1. Soak the rice noodles in warm water for about 10 minutes or until softened. Drain and set aside.
  2. Heat the cooking oil in a large wok or pan over medium-high heat.
  3. Saute the garlic and onion until fragrant.
  4. Add the pork or chicken, shrimp, and Chinese sausage. Cook until the meat is no longer pink and the shrimp turns pink.
  5. Add the cabbage, carrots, and green beans. Stir-fry for a few minutes until the vegetables are slightly tender.
  6. Push the ingredients to the side of the wok or pan, then pour the soy sauce in the middle. Let it sizzle for a few seconds.
  7. Add the softened rice noodles and chicken broth. Stir and toss everything together until well combined.
  8. Season with salt and pepper to taste. Continue to stir-fry for another 3-5 minutes or until the noodles have absorbed the liquid and are fully cooked.
  9. Add the green onions and toss to combine.
  10. Transfer the stir-fried rice noodles to a serving platter and serve with lemon or calamansi wedges on the side.
