Pancit Bihon (Stir-Fried Rice Noodles)
Stir-Fried Rice Noodles, also known as Pancit Bihon, is a popular Filipino-Chinese dish that is quick and easy to make. It's a flavorful and satisfying noodle stir-fry that is perfect for any occasion.
Ingredients
- 8 oz rice noodles
- 2 tbsp cooking oil
- 3 cloves garlic, minced
- 1 onion, sliced
- 1 cup sliced pork or chicken
- 1 cup sliced shrimp
- 1 cup sliced Chinese sausage (optional)
- 2 cups shredded cabbage
- 1 cup sliced carrots
- 1 cup sliced green beans
- 1/4 cup soy sauce
- 4 cups chicken broth
- Salt and pepper to taste
- 1/2 cup green onions, chopped
- Lemon or calamansi wedges for serving
Instructions
- Soak the rice noodles in warm water for about 10 minutes or until softened. Drain and set aside.
- Heat the cooking oil in a large wok or pan over medium-high heat.
- Saute the garlic and onion until fragrant.
- Add the pork or chicken, shrimp, and Chinese sausage. Cook until the meat is no longer pink and the shrimp turns pink.
- Add the cabbage, carrots, and green beans. Stir-fry for a few minutes until the vegetables are slightly tender.
- Push the ingredients to the side of the wok or pan, then pour the soy sauce in the middle. Let it sizzle for a few seconds.
- Add the softened rice noodles and chicken broth. Stir and toss everything together until well combined.
- Season with salt and pepper to taste. Continue to stir-fry for another 3-5 minutes or until the noodles have absorbed the liquid and are fully cooked.
- Add the green onions and toss to combine.
- Transfer the stir-fried rice noodles to a serving platter and serve with lemon or calamansi wedges on the side.
