Pancit Canton Fiesta

Ingredients
- 1 pack (500g) Pancit Canton noodles
- 2 tablespoons cooking oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/2 lb chicken breast, sliced into thin strips
- 1/2 lb shrimp, peeled and deveined
- 1 cup sliced Chinese sausage (Chorizo de Bilbao)
- 1 cup sliced cabbage
- 1 cup sliced carrots
- 1 cup snow peas
- 4 cups chicken broth
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon ground black pepper
- 1/2 cup green onions, chopped
- Calamansi or lemon wedges for serving
Instructions
- Heat the cooking oil in a large wok or pan over medium heat.
- Sauté the onions and garlic until fragrant.
- Add the chicken, shrimp, and Chinese sausage. Cook until the chicken is no longer pink and the shrimp turns pink.
- Add the cabbage, carrots, and snow peas. Stir-fry for a few minutes until the vegetables are slightly tender.
- Pour in the chicken broth, soy sauce, oyster sauce, and ground black pepper. Bring to a boil.
- Add the Pancit Canton noodles and cook for 3-5 minutes or until the noodles have absorbed the liquid and are tender.
- Stir in the green onions and cook for another minute.
- Transfer to a serving platter and garnish with calamansi or lemon wedges.
