Pancit Canton Fiesta

Ingredients

  • 1 pack (500g) Pancit Canton noodles
  • 2 tablespoons cooking oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/2 lb chicken breast, sliced into thin strips
  • 1/2 lb shrimp, peeled and deveined
  • 1 cup sliced Chinese sausage (Chorizo de Bilbao)
  • 1 cup sliced cabbage
  • 1 cup sliced carrots
  • 1 cup snow peas
  • 4 cups chicken broth
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon ground black pepper
  • 1/2 cup green onions, chopped
  • Calamansi or lemon wedges for serving

Instructions

  1. Heat the cooking oil in a large wok or pan over medium heat.
  2. Sauté the onions and garlic until fragrant.
  3. Add the chicken, shrimp, and Chinese sausage. Cook until the chicken is no longer pink and the shrimp turns pink.
  4. Add the cabbage, carrots, and snow peas. Stir-fry for a few minutes until the vegetables are slightly tender.
  5. Pour in the chicken broth, soy sauce, oyster sauce, and ground black pepper. Bring to a boil.
  6. Add the Pancit Canton noodles and cook for 3-5 minutes or until the noodles have absorbed the liquid and are tender.
  7. Stir in the green onions and cook for another minute.
  8. Transfer to a serving platter and garnish with calamansi or lemon wedges.
