Ingredients
- 1 pound pancit canton noodles
- 2 tablespoons cooking oil
- 4 cloves garlic, minced
- 1 onion, sliced
- 1 cup sliced pork belly or chicken breast
- 1 cup shrimp, peeled and deveined
- 1 cup sliced Chinese sausage (optional)
- 1 cup sliced carrots
- 1 cup sliced cabbage
- 1 cup snow peas
- 4 cups chicken or vegetable broth
- 1/4 cup soy sauce
- 1 tablespoon oyster sauce
- Salt and pepper to taste
- Green onions, chopped, for garnish
- Lemon or calamansi wedges, for serving
Instructions
- Soak the pancit canton noodles in warm water for 10 minutes, then drain and set aside.
- In a large wok or pan, heat the cooking oil over medium-high heat. Add the garlic and onion, and sauté until fragrant.
- Add the pork belly or chicken, and cook until browned. Then, add the shrimp and Chinese sausage, if using, and cook until the shrimp turns pink.
- Stir in the carrots, cabbage, and snow peas, and cook for a few minutes until the vegetables are slightly tender.
- Pour in the broth, soy sauce, and oyster sauce. Bring to a simmer.
- Add the drained pancit canton noodles to the wok and toss to combine with the other ingredients. Cook until the noodles have absorbed the liquid and are tender.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and serve with lemon or calamansi wedges on the side.
