Pancit Canton (Filipino Stir-Fried Noodles)

Ingredients

  • 1 pound pancit canton noodles
  • 2 tablespoons cooking oil
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 1 cup sliced pork belly or chicken breast
  • 1 cup shrimp, peeled and deveined
  • 1 cup sliced Chinese sausage (optional)
  • 1 cup sliced carrots
  • 1 cup sliced cabbage
  • 1 cup snow peas
  • 4 cups chicken or vegetable broth
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce
  • Salt and pepper to taste
  • Green onions, chopped, for garnish
  • Lemon or calamansi wedges, for serving

Instructions

  1. Soak the pancit canton noodles in warm water for 10 minutes, then drain and set aside.
  2. In a large wok or pan, heat the cooking oil over medium-high heat. Add the garlic and onion, and sauté until fragrant.
  3. Add the pork belly or chicken, and cook until browned. Then, add the shrimp and Chinese sausage, if using, and cook until the shrimp turns pink.
  4. Stir in the carrots, cabbage, and snow peas, and cook for a few minutes until the vegetables are slightly tender.
  5. Pour in the broth, soy sauce, and oyster sauce. Bring to a simmer.
  6. Add the drained pancit canton noodles to the wok and toss to combine with the other ingredients. Cook until the noodles have absorbed the liquid and are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions and serve with lemon or calamansi wedges on the side.
