Ingredients
- 1/2 pound pancit canton (dried egg noodles)
- 2 tablespoons cooking oil
- 3 cloves garlic, minced
- 1 onion, sliced
- 1/2 cup sliced pork or chicken
- 1/2 cup shrimp, peeled and deveined
- 1 cup sliced mixed vegetables (carrots, cabbage, snow peas)
- 1/4 cup soy sauce
- 1 tablespoon oyster sauce
- 4 cups chicken broth
- Salt and pepper to taste
- Green onions, chopped (for garnish)
- Lemon or calamansi wedges (for serving)
Instructions
- Soak the pancit canton in water for about 10 minutes or until softened. Drain and set aside.
- In a wok or large pan, heat the cooking oil over medium-high heat.
- Saute the garlic and onions until fragrant.
- Add the pork or chicken and cook until no longer pink.
- Stir in the shrimp and cook until they turn pink.
- Add the mixed vegetables and cook until slightly tender.
- Pour in the soy sauce, oyster sauce, and chicken broth. Bring to a boil.
- Add the soaked pancit canton to the wok and gently toss to combine with the other ingredients.
- Cook for 3-5 minutes or until the noodles have absorbed the liquid and are fully cooked.
- Season with salt and pepper to taste.
- Transfer to a serving platter and garnish with chopped green onions.
- Serve with lemon or calamansi wedges on the side.
