Pancit Canton (Stir-Fried Egg Noodles)

Ingredients

  • 1/2 pound pancit canton (dried egg noodles)
  • 2 tablespoons cooking oil
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1/2 cup sliced pork or chicken
  • 1/2 cup shrimp, peeled and deveined
  • 1 cup sliced mixed vegetables (carrots, cabbage, snow peas)
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Lemon or calamansi wedges (for serving)

Instructions

  1. Soak the pancit canton in water for about 10 minutes or until softened. Drain and set aside.
  2. In a wok or large pan, heat the cooking oil over medium-high heat.
  3. Saute the garlic and onions until fragrant.
  4. Add the pork or chicken and cook until no longer pink.
  5. Stir in the shrimp and cook until they turn pink.
  6. Add the mixed vegetables and cook until slightly tender.
  7. Pour in the soy sauce, oyster sauce, and chicken broth. Bring to a boil.
  8. Add the soaked pancit canton to the wok and gently toss to combine with the other ingredients.
  9. Cook for 3-5 minutes or until the noodles have absorbed the liquid and are fully cooked.
  10. Season with salt and pepper to taste.
  11. Transfer to a serving platter and garnish with chopped green onions.
  12. Serve with lemon or calamansi wedges on the side.
