Pancit Habhab Delight
Pancit Habhab Delight is a popular Filipino noodle dish that originated from the province of Quezon. It is traditionally served on a banana leaf and eaten without utensils, using only the mouth to slurp the noodles. This recipe puts a delightful twist on the classic pancit habhab, combining flavorful ingredients to create a truly satisfying dish.
Ingredients
- 1 pack (8 oz) rice noodles
- 2 tablespoons cooking oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup sliced cabbage
- 1 cup julienned carrots
- 1 cup sliced bell peppers
- 1 cup snow peas
- 1/2 cup soy sauce
- 1/4 cup water
- 1 teaspoon sugar
- Salt and pepper to taste
- Calamansi or lemon wedges for serving
Instructions
- Soak the rice noodles in hot water for 10 minutes, then drain and set aside.
- In a large pan, heat the cooking oil over medium heat. Sauté the onion and garlic until fragrant.
- Add the cabbage, carrots, bell peppers, and snow peas. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
- Push the vegetables to the side of the pan and add the soaked rice noodles. Pour the soy sauce and water over the noodles. Sprinkle with sugar, salt, and pepper. Toss everything together until well combined.
- Cook for another 5-7 minutes, stirring constantly, until the noodles are fully cooked and the sauce has been absorbed.
- Transfer the pancit habhab to a serving plate lined with banana leaves. Serve with calamansi or lemon wedges.
