Ingredients
- 1 lb thick rice noodles
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb squid, cleaned and sliced into rings
- 1/2 lb smoked fish, flaked
- 1/4 lb pork belly, sliced into thin strips
- 4 cloves garlic, minced
- 1 onion, chopped
- 4 cups shrimp or fish stock
- 1/2 cup annatto (achuete) oil
- 1 cup water
- 1/2 cup fish sauce (patis)
- 1/4 cup green onions, chopped
- 1/4 cup chicharron (pork cracklings), crushed
- Hard-boiled eggs, sliced
- Lemon or calamansi wedges
Instructions
- Boil the rice noodles according to package instructions, then drain and set aside.
- In a large pan, heat the annatto oil and sauté the garlic and onion until fragrant.
- Add the pork belly and cook until slightly browned.
- Pour in the shrimp or fish stock and water, then bring to a simmer.
- Add the shrimp, squid, and smoked fish, and cook until the seafood is done.
- Season the sauce with fish sauce, then add the cooked rice noodles and toss to coat.
- Transfer the Pancit Malabon to a serving platter and top with chopped green onions, crushed chicharron, and sliced hard-boiled eggs.
- Serve with lemon or calamansi wedges on the side.
