Pancit Malabon Madness

Ingredients

  • 1 lb thick rice noodles
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb squid, cleaned and sliced into rings
  • 1/2 lb smoked fish, flaked
  • 1/4 lb pork belly, sliced into thin strips
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups shrimp or fish stock
  • 1/2 cup annatto (achuete) oil
  • 1 cup water
  • 1/2 cup fish sauce (patis)
  • 1/4 cup green onions, chopped
  • 1/4 cup chicharron (pork cracklings), crushed
  • Hard-boiled eggs, sliced
  • Lemon or calamansi wedges

Instructions

  1. Boil the rice noodles according to package instructions, then drain and set aside.
  2. In a large pan, heat the annatto oil and sauté the garlic and onion until fragrant.
  3. Add the pork belly and cook until slightly browned.
  4. Pour in the shrimp or fish stock and water, then bring to a simmer.
  5. Add the shrimp, squid, and smoked fish, and cook until the seafood is done.
  6. Season the sauce with fish sauce, then add the cooked rice noodles and toss to coat.
  7. Transfer the Pancit Malabon to a serving platter and top with chopped green onions, crushed chicharron, and sliced hard-boiled eggs.
  8. Serve with lemon or calamansi wedges on the side.
