Pancit Malabon Magic

Ingredients

  • 1 lb thick rice noodles
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb squid, cleaned and sliced into rings
  • 1/2 lb smoked fish, flaked
  • 1/4 lb pork belly, sliced into thin strips
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups shrimp or fish stock
  • 1/2 cup annatto (achuete) oil
  • 1 cup water
  • 1/2 cup fish sauce (patis)
  • 1/4 cup green onions, chopped
  • 4 hard-boiled eggs, sliced
  • 1/2 cup chicharron (pork cracklings), crushed
  • 1/4 cup fresh parsley, chopped
  • Calamansi or lemon wedges for serving

Instructions

  1. Soak the rice noodles in water until softened, then drain and set aside.
  2. In a large pan, heat the annatto oil over medium heat. Sauté the garlic and onion until fragrant.
  3. Add the pork belly and cook until lightly browned.
  4. Pour in the shrimp or fish stock and water. Bring to a simmer.
  5. Add the shrimp, squid, and smoked fish. Cook for 3-5 minutes or until the seafood is cooked through.
  6. Stir in the fish sauce and green onions. Toss in the rice noodles and mix until well-coated with the sauce.
  7. Transfer the Pancit Malabon to a serving platter and top with sliced hard-boiled eggs, crushed chicharron, and chopped parsley.
  8. Serve with calamansi or lemon wedges on the side.
